Vegan Fried Rice recipe

Whenever someone asks me for a simple and delicious plant based dish, I give them a recipe for vegan fried rice. This is hands down one of my all time favourite recipes, and one I keep coming back to.

It’s so simple to make and can be done in 35 minutes with only 10 minutes of prep, making it a great choice for any week day.

The brown rice is flavoured with miso paste, while the vegetables are cooked with tamari, coconut sugar, fresh ginger and heaps of garlic.

This recipes calls for onion, sweet corn, carrot and green beans but you can easily modify the recipe to fit you better by swapping some of the vegetables with your personal favourites or with what you have in the fridge. I rarely ever make the same vegan fried rice twice.

I hope you’ll love this dish as much as me! It’s satisfying, simple, flavourful and delicious. It goes well with a simple green salad but it stands great on its own too.

Vegan Fried Rice

This Vegan Fried Rice is satisfying, simple, flavourful and so delicious. It can be done in 35 minutes with only 10 minutes of prep, making it a great choice for any week day.

Ingredients:

Rice:
1 cup brown rice (200 g)
2 cups water (240 ml)
Optional: 1 tbsp miso paste * (sub with ½ – 1 tsp salt)

Sauce:
2 tbsp tamari sauce
1 tsp coconut sugar
3 garlic gloves, minced
1 tsp fresh ginger, grated

Vegetables:
2 cups of green beans (about 200 g), I used frozen
1 onion, sliced thinly
½ cup sweet corn (120 g)
1 carrot, sliced thinly

Instructions:
  1. Rinse your rice and add them to a large pot with 2 cups (480 ml) of boiling water. Allow the rice to simmer on low heat for 30 minutes or until soft (cooking time will depend on your type of rice).
  2. Mix all of the ingredients for the sauce in a small bowl.
  3. Chop the carrots, onion and garlic and mix them with the green peas. Cook it on high heat for 3-5 minutes. Add a splash of water if it starts sticking to the bottom.
  4. Turn the heat down to medium and add the sauce to the vegetables and mix until all the vegetables are covered in sauce.
  5. Add the cooked rice to the pan, mix everything together and fry for another 3-4 minutes.
  6. Season with salt and pepper and serve.
