So I have this fireplace in my apartment, and for the past ten months that I’ve lived here, I haven’t been sure whether it’s a REAL fireplace. You know… like the kind that allows smoke to exit your apartment in an orderly fashion, as opposed to the kind that burns everything you love to the ground, then rubs it in that you’ll never eat real s’mores in the comfort of your home.
It’s been a serious source of mystery and danger.
For the past couple of weeks, the temperature has been dropping, and I have been ordering various items off Amazon Prime in preparation to test this sucker out. A screen, some tools, an adorable mini fire extinguisher.
Safety first, you guys. It’s all cheaper than a funeral.
Finally, last night was the night. With a little bit of help, I sat in the background and watched as a baby log caught fire and none of my furniture did. It was amazing. And now that I know there is a working fireplace in my apartment, you guys had better watch out for some killer s’mores posts.
But until then, while it’s still October/ Pumpktober, these incredibly fluffy, cakey pumpkin cookies should hold you over just fine. The cake flour in them gives a completely different texture than your average cookie. They are like little pumpkin pillows of fluff and love, begging to be dipped in your coffee and eaten in large quantities. How can you deny them that?

Ingredients
1 cup butter, softened
1 cup granulated sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 egg
1 tsp vanilla
1/2 15-ounce can pumpkin
2 cups cake flour
1 c chocolate chips
½ c white chocolate chips
Directions
Preheat oven to 350. Cream butter and sugar together in a stand mixer with paddle attachment. Add baking powder, baking soda, salt, cinnamon, and nutmeg, and mix. Add egg and vanilla, mix thoroughly. Add pumpkin. Slowly add cake flour. Stir in chocolate and white chocolate chips. Scoop onto baking sheet by the rounded tablespoonful. Bake for 12-15 min.
