Pears bug me. Yes, bug me.
No matter how often I’ve tried to ripen them, they’re typically bruised once finally soft enough to eat, or tend towards the tasteless.
So simple. So fresh. So pretty!
Roasted Pear and Honeyed Goat Cheese Bruschetta
Loaf of French bread cut into thin slices
4 oz. goat cheese
2 tsp. fresh local honey
3 pears, cut into 1″ pieces
Olive oil
Sea Salt
Place pears on a cookie sheet and drizzle with olive oil and sprinkle with a dash of sea salt. Roast at 400 degrees for about 20-25 min or until caramelized.
On another cookie sheet, lined with foil, add the bread and drizzle with olive oil. Bake in the same oven about 10 min, until very lightly browned.
In the meantime, mix the honey and goat cheese and set aside.
Once bread and pears are ready, assemble by topping the bread with the goat cheese mixture and sprinkling on the pears. Drizzle more honey over if desired… but mine were good as is.
