Anyway, I’d like to begin with a brief disclaimer: I don’t mean for this post to sound sexual at all, but it’s probably going to and we’re all going to have to deal with it. Why? Because it’s hard to write a post about delicious nuts without a little giggle.
So go ahead and get it out of your system. You know you want to.

Right, so now that that is over with – let’s talk nuts. I’m not a big nut snacker. I don’t nosh on them for fun, even though all the magazines say that I totally should if I want to keep a trim figure and attract the men folk. But at any given moment, I can think of twenty things I’d rather eat than nuts. Bacon. Cheese. Kale. Anything, really.
So for me to take the time to make something that’s almost completely composed of nuts is a little absurd. Uncharacteristic, if you will.
But it just so happens that when you add sugar and spice to a bag of otherwise stupid, boring nuts – they become a little bit magical. Seriously. They disappear. It’s magic.
I’ve made spiced nuts before, but this is the first time I’ve tried adding sugar to them. You see, I used to be on this thing called a constant diet where I wouldn’t allow myself extravagant luxuries like sugar on nuts. I’m really glad to be in a better place these days. Because otherwise, I wouldn’t be able to eat these tasty nuts and I would just stare at them longingly as I packed them into little cellophane bags to be shipped off.
But since that’s not the case, I snacked on plenty. Which means that if you win, there are fewer in your bag than there were supposed to be. You’re welcome for that.
Luckily, I’m giving you the recipe so that you can make as many as you want. So nibble away.
Sugar & Spice & Everything Nice Nuts
Ingredients:
- 1.5 lb mixed nuts
- ½ c dark brown sugar
- ¼ c granulated sugar
- 1 ½ tsp salt
- 1 ½ tsp cinnamon
- ¼ tsp cayenne
- ¼ tsp nutmeg
- 2 egg whites
Directions:
Preheat oven to 300 F. Whisk together sugars, spices, and salt. In a separate bowl, combine nuts with egg whites and make sure they are evenly coated. The egg whites will help the sugar & spice to stick as well as provide a nice crunch when the nuts are baked. Top with sugar & spice mixture, combine thoroughly. Place on a baking sheet coated in nonstick spray or lined with parchment paper, and place into the oven. Stir the nuts every 7-10 minutes for 30-35 minutes. Remove from oven and allow to cool. Nuts may appear a bit goopy still, but will harden as they cool.
