I guess you could say I’ve always been a dreamer.
Which is fine by me, because like they say…
dream big, or go home, right?
Well, this week, I dreamed big, but it was a very different type of dream.
I dreamed of food. And like they also say, you only really know a foreign language when you dream in it. Guess that means I’m a true foodie now, right? Only took 42 years…
But this wasn’t just a dream about food, like dinners in exotic locations, or homey comfort foods at family get togethers. But a recipe. This recipe. And the funny thing is that I’ve never made a chimichurri, let alone tasted one.
It was right on (well, with a few fun twist). From the ingredients, to the mise en place, to the execution and even the presentation of it all. Yup, it was pretty much an all night dream.
I’d say I went big. Bright flavors, and the perfect low carb meal (without the rice, of course). And a healthy, well-rounded meal, even with the rice. Still can’t believe how great this turned out!
But, now, thinking about it, I realize that dreaming isn’t just about the big things, but the little things that encourage you to try new things, and have a bit more fun. Especially in the kitchen, and especially when you’re able to relish even the simplest foods. Play around with flavors, try a new dish, or even add some twists to an old (or new) favorite.
So, foodie, I’ll take, as I love the language of food. A language of creativity, passion and most of all community- no matter how big of small.

Asian Style Honey Lime Steak with Chimichurri Sauce
(the recipe in… and of my dreams- YUM!)
For the Steak:
2 or more steaks, I used sirloin
2 limes, juiced
1/4 cup soy sauce
1/3 cup olive oil
3 tablespoons honey
1 clove garlic, minced
3 thin round slices of fresh ginger, make sure and remove as you cook steaks
Salt and pepper
Mix all the marinade ingredients together in a large bowl. Add in the steaks and marinate at least 3-4 hours… more if you can. Then cook as desired, such as barbecuing, broiling or pan frying.
For the Chimichurri:
1 cup loosely packed parsley (stems removed)
1/3 cup loosely packed cilantro (stems removed)
1 tablespoon oil
1/4 of a red onion, cut into chunks
2 garlic cloves
1/4 teaspoon grated fresh ginger
1 tablespoon fresh lemon juice
1/8 teaspoon crushed red pepper
Salt and pepper to taste
Place all in ingredients into a food processor (I love my mini) and pulse until combined and looks like photo above. Check for seasonings and add more oil if needed for a smooth texture. Serve over the steak.
