It’s not often, but this week, “Where’s the beef,” beat out “Eat mor chikin,” in my house.
Maybe because it’s grilling season?
Or maybe it’s because my man couldn’t bear the thought of us actually reaching number 276, in Diana’s “500 unusual and interesting ways you never knew that chicken could taste so good” crusade.
Hey, it could happen!
Citrus Soy Glazed Sirloin Stir Fry
3 small leeks, cut into half moons
1/2 sweet yellow onion, cut into thin half moons
1-1/2 cups green beans, cut into 1″ pieces
2 garlic cloves, minced
Sirloin steak cut into strips (I used 2 small steaks, trimmed of fat)
Olive oil
1/2 cup soy sauce
2 tablespoons balsamic vinegar
2 tablespoons Briannas Blush Wine Vinaigrette (or substitute 2 teaspoons strawberry jam!)
Salt and pepper to taste
Seasonings as desired (I like to sprinkle on some of my favorite Parisien)
2 tablespoons cilantro, rough chopped
Squeeze of lime juice over all
Cooked white or brown rice (optional)
In a large sauté pan, add the onion and leeks with oil, salt, pepper and dried herbs. Sauté over med. high heat until softened. Then add in the green beans and steak. Stir fry until steak just starts to brown. Add in the garlic and stir fry another minute. Turn down the heat a bit and add in the soy sauce, balsamic and dressing. Add more seasonings and salt as needed. Continue to stir fry for a few minutes or until steak is medium rare and green beans are crisp-tender.
Add in fresh cilantro and squeeze lime juice over all. Serve over rice if desired.
