Hey guys… do you remember that time I made a sweet and spicy grilled cheese sandwich and you all went completely nuts? Like… pinning it 60 thousand times, talking about it in your sleep, making sexual comments about the oozing cheese, etc.?
Well… I remember. It was pretty great. And it opened my eyes to two very important realizations:
1. I think it’s finally time to add “sandwich photography” onto my resume. This is a big step.
2. You guys fucking love cheese. And so do I. Which I think makes us all friends.
So, friends, I have a gift for you. Consider it an early Thanksgiving present that you’re definitely going to love. It’s called a sandwich. You make it with leftover turkey and leftover cranberry sauce and a shitload of cheese. Because the only thing better than Thanksgiving dinner is Thanksgiving dinner covered in cheese.
It has a lot of the same qualities as my other grilled cheese sandwich, which makes it completely awesome and delicious. The tart-sweet cranberry sauce is a match made in heaven with a few slices of spicy pepperjack. It’s a flavor combination you’ll want to come back to every year. Trust me.
I do have one request regarding this sandwich. It’s very important to me.
Never use canned cranberry sauce.
Seriously. That totally ruins it. Homemade cranberry sauce is SO EASY and delicious, there is absolutely no excuse for not having it at your holiday table. I make a cranberry sauce very similar to the one Julie posted over at Table for Two Blog, so if you don’t have a recipe, use that one. Put down the can, and pick up the fresh cranberries, friends. You can do it. I believe in you.

The Ultimate Thanksgiving Leftover Grilled Cheese
Ingredients:
- 2 very large slices of bread (whatever you have will work. I used challah.)
- 2 Tbsp butter
- 1 large slice leftover turkey
- 2 oz pepperjack cheese
- 2 oz provolone cheese
- 2 Tbsp homemade cranberry sauce (NOT STORE BOUGHT.)
Directions:
Butter one side of each slice of bread using 1 Tbsp of the butter. Place provolone on top, then pepperjack, then homemade cranberry sauce. Place turkey and other slice of bread on top, butter side out (if you like the turkey to be hot, heat it a little before putting it on the sandwich). Melt remaining butter in a skillet over medium-low heat. Place sandwich on the skillet and let it cook slowly until golden-brown on the bottom, about 3 minutes. Flip onto other side and continue to cook until both sides are browned. Slice in half and enjoy!
